    Sweet potatoes are definitely not Yams, and shouldn't be labeled as yams...It's ignorance that continues to mix up the two. I absolutely adore sweet potatoes.

    A purple sweet potato pie would change the game!! This was a very necessary video that I wish we'd watched a few weeks ago. My bf tried this potato lasagna recipe and the potatoes took forever to cook. Now realizing we chose the wrong ones!!

    My process for massively speeding up yam cooking is: .Wash, scrub with veg brush .Stab it with a knife several times all over and deep .Wrap in moist paper towel large then put on a plate .Microwave for 8minutes or so now med high .Stab to test, microwave more if center is still firm .Remove from towel .Pat dry .rub with oil of choice .season outside with salt .finish in oven/toaster oven for 10 min or so, rotating at least once. Serve. Cuts down the time by about 1/4 or so, and ends up with an almost identical end product as roasting the whole time, sometimes superior actually.

    The oriental sweet potato reminds me a lot of chestnuts. It’s my favourite, oven roasted and spread with some butter before eating

    For softer, moister purple stokes, put in pan with an inch or so of water when baking

  • You should steam cook the japanese sweet potatos and those purple ones for the cooking method. They cook up in around 20 mins and the steaming process causes the texture of the sweet potatos to be really moist and soft. Gets rid of the dryness.

    The purple ones seem starchier and heavier or fuller, like a well baked homemade bread. I love them. So filling. They mix very well in Mexican type dishes or curry dishes, believe it or not. They mix in very well with spices.
