Ube, known as purple yam or many other names, is a species of yam, a tuberous root vegetable. The tubers are usually vivid violet to bright lavender in color, hence the common name, but they may sometimes be plain white. It is sometimes confused with taro and the purple sweet potato.
It can be easy to confuse purple sweet potatoes and Ube – a type of yam – because of their rich purple color, but make no mistake, they are two different ingredients.
紫薯的英文名字叫purple yam,东南亚那边的人叫它ube,紫心番薯的名字叫purple sweet potato.
很多人错认为紫心番薯是紫薯,其实它们是不同的。
外皮紫薯像是树皮很厚粗糙不可食用,紫心番薯的外皮和一般番薯一样很薄可食用
紫薯的内在基本不甜(至少我没吃出多少甜味),紫心番薯是甜的
紫薯的质地像是芋头干硬且多淀粉,紫心番薯相对于一般番薯也是多淀粉的,但是不干且柔软。
两者在制作甜品中可替换。
在制作芋圆中,可以用到芋头,紫薯和番薯,每种都有不同的风味,但是芋头中的香芋不是紫薯,口感质地有些相似,颜色不同。

    Many people mistakenly assume taro is ube. Ube is type of root crop use for dessert and sweet stuff; on the other hand, taro is also a root crop, but commonly use in soup dish or vegetable dish.

Will keep an eye out for ube to make desserts (though I think I swapped the purple potato by accident/ still turned out fine)

    Thanks ❤ I ate purple taro maybe in Taiwan. Yummmmm. Ube ice-cream so yumm too. Yam is softer. Purple sweet potato is nice and sweet .. and you can eat skin :) ❤

    Japanese sweet potato is my favorite but I never tried steaming a sweet potato I usually cut them in half and put them on a tray with some olive oil and they come out caramelized because of all the sugar and the skin is nice too
  • Most of the time I bake my potatoes unwrapped, and once in a while I'll steam them in my Ninja 3 - 1 cooking pot. The Garnet is my favorite but, the Japanese Oriental may become my favorite. It was so delicious tonight, and the flesh wasn't as dry like the ones I've had in the past. Thanks for sharing.
