Lazy Day Dinner and Dessert

No Bake Lemonade Pie

1 package softened cream cheese
1 14 oz can sweetened condensed milk
¾ cup of thawed lemonade concentrate
1 8 oz container of whipped topping
2 Graham cracker crusts

Mix all the ingredients and pour them into the graham crusts. It couldn’t get easier lazier than that.

Pizza Pasta Skillet Dinner

1 # ground beef
1 bag of mini pepperoni or the larger ones you can just quarter
2 cups dried pasta
1 jar 640 g (or about three cups) of marinara sauce
2 cups of water
2 cups of mozzarella cheese
½ tsp onion powder
½ tsp garlic powder
1 tsp Italian seasoning
S & P

Brown the hamburger in a skillet and add the pepperoni when the hamburger is just about done. Cook thoroughly and add the spices. Now add the marinara sauce and water. Then add the dry pasta and one cup of cheese. Make sure the pasta is under the water level. Put a lid on and cook for about 8 minutes. Test the pasta and if it is close to being cooked top the pan with the remaining cheese and another handful of pepperoni. Put the lid back on and bring it back to the bubble. Shut the pan off and let it rest for 10 minutes. Now it is ready to serve. Perfect for those lazy days.

  • After my husband passed away I would stay in my pajamas most days. One day my son came over, he looked at me and wanted to know if I was ever going to get dressed again. I told him I wasn’t sure. I did start getting dressed, but some days that was about all I could manage. It is a journey.

You are not alone, you do not walk alone in this journey of grief and loss. I look back on my life and how i did or didnt deal with grief and there is only one way i made it through - and it was because Jesus Christ Himself held my hand, and i never knew it but when i came through the fire, He pulled me out. I am so sorry for your tragic loss. Your daughter would not want you to be sad forever.

    An idea for your husband, a little package of graham crackers to dip. I watched a video earlier today where the young lady made a key lime fruit dip. They had fruit and graham crackers to dip and that was her family's favorite.

  • Loved both of these recipes. Personally, for the main dish, I would quarter the pepperoni that goes into the dish if I couldn't get minis, but this is definitely a dish that is right up my alley 'cause I love "one pot" meals. I'm lazy most days, LOL. Loved the dessert too. I think it would lend itself to being made with any frozen juice if that were someone's preference. A tip for your husbands dessert - you could always mix some graham cracker crumbs with melted butter and press it into the bottom of the containers before adding the filling mixture.

I Love your bread machine recipes. I made bread, cinnamon rolls and buns. All turned out excellently with my Black and Decker bread machine. It's an old one that was given to me 1 year ago.     We would get a half pear with cottage cheese and shredded cheese over that. It was delicious. I served it to my family when I had children. It could be a used as a salad if you put a leaf of lettuce under it or as a dessert without the lettuce for the pear to sit on.
