Shipwreck Casserole

This casserole could be called any number of things, like 7 layer casserole or football casserole and seems to be quite versatile. I will not be including ingredient amounts because you should have to freedom to use whatever vegetables you happen to have on hand. I also don’t think its necessary to have both potatoes and rice in the dish but most of the recipes I read or saw had rice in it and I wanted to stay as true to the original recipe as possible.

My layers included:
1 lb of cooked hamburger
4 medium potatoes
2 large carrots
1 cup of frozen peas
½ cup rice
1 medium sized onion sliced
1 can tomato soup with one cup of water
1 tsp garlic powder
1 tsp oregano
½ tsp rosemary

Start with the onions on the bottom and then layer everything else into the dish. Mix the last 4 ingredients together and pour over top of the dish. Cover with aluminum foil.

This dish goes in to a 350 degree oven for at least one hour or until the vegetables when tested with a fork are finished cooking.

  • Hi Colleen; I live in a small town on the Ontario shore of Lake Huron, and other than the blizzard at Christmas, we have had an unseasonably warm winter... a January like I have never seen in my lifetime! I just wanted to tell you that I love the hominess and comfort you instill in your channel. I loved the entire series you did at Christmas time, and have been encouraging my children to give you a watch and subscribe. They are all young, but like to cook, and as your and my cooking styles are very similar I have assured them that it would be like cooking with a young grandmom.     Save those veggie scraps! They make the BEST veggie stock. We save our veggie scraps (asparagus bottoms, celery ends, onion skins, garlic skins, broccoli stalks, etc.) and freeze them in gallon-size ziplock baggies. When we fill three or four bags, we take the scraps and boil them down for veggie stock and can it! Nothing wasted! We, too, compost but save that for coffee grounds, banana peels, apple peels, etc.

  • My mom always made this. She fried onions and hamburger together and lots of times used frozen mixed veggies with potatoes. We called it husbands delight. So good!
  • Colleen your casserole looks delicious! I make one almost like this one but I use a can of cream of mushroom soup in place of the tomato , and I use an envelope of Lipton onion soup mix, and I agree I always cook my hamburger before I put it in any of my casseroles ! God bless ❤️🙏🙋🏻

    You peel just like I do. My husband thinks it's funny because he is a peel outward person. I started out peel forward but switched because it was much more comfortable for me when I started to peel back towards me.

  • I have a friend from Nova Scotia who made this dish but she would make up a recipe of Bisquick, roll it flat, pour on ketchup, roll it up and cut it like you would a cinnamon bun and cook it with that on top! Like a pot pie I guess. That’s for reminding me!

    My grandmother was making this in the 19teens and we make it often in winter. She called it French Bake though she was not French but her husband was from Wyebec as a baby(1887) The difference is she put the raw burger in two layers the first on the bottom then onion and pepper and salt. A can of soup half diluted with water poured over the potato layer and then repeated. It baked for almost two hours at 350 f. And Everone still loves it. My mother always served a green vegetable on the side with crusty bread. Bon appetite

  • Will make this, have half for supper + then freeze the other half, for when I need a quick supper. Enjoy watching you prepare recipe's, so I get a heads up, when I go to do them
  • I make that 7 layer dinner at least once a month, I add quarter cup ketchup to the sauce and a layer of breakfast sausage on top of the burger. I season my burger with garlic plus and make in a dutch oven pot. Enjoy your videos, from Calgary Alberta.
