So very delicious, low carb, light, fluffy, vegan omelette. This really is pillowy and tastes so much like the egg version.

First, finely chop all 3: 1/4 c cabbage 2 t fresh dill 1 c fresh baby spinach Blend till a smooth paste: 4 oz crumbled firm tofu 3/4 c hi-protein plant milk (pea) 1/4 c almond flour 1/8 t black salt (for egg flavor) 1/8 t turmeric Salt & pepper to taste Chili powder to taste Whisk in until combined: 1/2 t psyllium husk powder Now in a hot skillet: 1 or so T oil Pour in batter paste Sprinkle veggies & herbs on top Cook about a minute or so Then gently drag & mix until your desired doneness - - it will never be completely hard, just continue until it feels done. Fold in half, plate & eat.

    I tried the recipe and had difficulty with the omelet forming. I decided to add 1Tbs of psyllium husk and that helped. Thanks for the recipe. Love it!
