We moved to our 11 acres in 2011 from a large city in the Midwest with zero carpentry and farming skills. We live with no solar / wind power / public water or well. We share our adventure to a sustainable life, growing our own food from vegetables to meat. We post videos DAILY and they range from HOW TO to EVERYDAY LIFE and NUTRITION on the off grid homestead. We were city folks just like you probably and wanted to enjoy life and have more control over our food. We share food recipes as well as natural remedies.

  • First time I tried making a skoby from this technique , and had success. I shouted out;"we got skoby"! That was 2 years ago, and still growing the original skoby. I have you Stacy, to thank for that inspiration.

    I couldn't find unflavored, so I did an experiment with GT Synergy Trilogy. I just poured it in a jar without adding sweet tea, covered the jar with a scrap of an old pillowcase secured with a rubber band. In eight days I had a nice SCOBY! I kept it at 85 degrees with a seed germination mat inside of a cooler (lid off for air circulation). Just made my first batch of kombucha with it and it is fantastic!

    IT'S ALIIIIVE!!! I was tired of buying kombucha every week and have been putting off buying a starter kit. I thought... I bet Doug and Stacy have a video on making this yourself. SURE ENOUGH! It's been one week since I started my scoby and there is a beautiful layer of the "jelly pancake thing" growing. I'm SO EXCITED!!! Thank you, Stacy!!!! I also ordered the 500-year-old sourdough starter from Baker Creek you suggested. I look forward to starting that next week. HAPPY GROWING!

    I started making my SCOBY from scratch the day after you posted this video. Today was the first day I looked in on it and I have a SCOBY. It is about 1/4" thick. Thank you for showing us how to start our own.

  • I did this and it works! I had to use ginger flavored because no store in my area carries the original kombucha. I'm starting another Scobie now due to a recent move. Love your information and the way you teach.
  • When I started making kombucha a few years ago yours was one of the first videos I watched. People like you that are don't sweat it, just do it are my kind of people. I see people now that are so hard nosed, I would never have even begun the process. And now I've learned there's lots of different ways to make kombucha. My first kombucha I used sweet tea, a vinegar scoby and a little bit of a really good tasting in vinegar. It made wonderful kombucha. Some people swear you don't have to have the 'pellicle'. 10 different people would have 10 different definitions for a scoby. All you need is a starter of some kind and sweet tea. Coffee kombucha is my favorite. I tell people don't let anything stop you from making this and enjoying it.
  • I have kept my scoby going since January. Made my first blueberry one after watching your video. I use unbleached coffee filters and mason jar bands on mine. Congratulations to the HHOTM's.

    Yay! This is for me! I wanted to ask you about this. I couldn’t keep up with the kombucha, and my scobi died. Now, I know how to start again!
  • Exactly how I do mine. One jar of original flavored Kombucha I half and it makes me two 1 gallon scobys. Great job!!! ( one note: I actually blend my Kombucha in the blender to disperse all the bacteria and yeast well and then divide for each gallon... Scoby every single time!)

    I'm a homestead homey now. Just started my 1st masontops fermentation, have my 4 jars all lined up on the counter, hope they turn out well. My next will be kombucha as soon as I get my Scobey ready . GRATITUDE DOUG AND STACy
