Delicious Egg Fried Rice Recipe - Easy, Customizable & Perfect Every Time!

Ingredients:
1 1/2 cups long-grain rice (preferably jasmine), cold
3 tablespoons butter or vegetable oil, divided
3 large eggs, beaten
5 cloves garlic, grated or finely chopped (or ½ teaspoon ginger/garlic paste)
1 (1") piece ginger, peeled and grated or finely chopped
2 scallions, white, pale green, and dark green parts separated, thinly sliced
2 tablespoons low sodium soy sauce
2 teaspoons oyster sauce (optional)
1 teaspoon granulated sugar
1/2 teaspoon kosher salt, or to taste
1/2 teaspoon white pepper
1/2 teaspoon black pepper
1/3 cup mixed vegetables
1/2 teaspoon toasted sesame oil
Instructions:
Prepare Rice: Ensure the rice is cooked and cold. Freshly cooked rice will not work well for fried rice.
Cook Eggs: Heat 1 tablespoon of butter or oil in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove from the skillet and set aside.
Sauté Aromatics: In the same skillet, add the remaining butter or oil. Add the garlic and ginger, and sauté for about 1 minute until fragrant.
Add Vegetables and Scallions: Add the white and pale green parts of the scallions and the mixed vegetables. Sauté for 2-3 minutes until the vegetables are tender.
Combine Ingredients: Add the cold rice to the skillet, breaking up any clumps. Stir-fry for about 3-5 minutes until the rice is heated through.
Season and Mix: Add the soy sauce, oyster sauce (if using), sugar, salt, white pepper, and black pepper. Mix well to combine all the ingredients. Return the cooked eggs to the skillet and stir to distribute evenly.
Final Touch: Add the dark green parts of the scallions and the toasted sesame oil. Mix well.
Serve: Serve hot, and enjoy your delicious homemade fried rice!
Tips:
Customize by adding cooked chicken, shrimp, beef, or tofu for added protein.
