Andrea Nguyen Makes Nuoc Cham Dipping Sauce

Andrea Nguyen, author of Vietnamese Food Any Day, shows us her recipe for the classic Vietnamese dipping sauce, Nuoc Cham. Feel free to add more lime juice, fish sauce or sugar to suit your taste and achieve your preferred balance of sour, sweet and salty.

  • Nouc Cham is like gold... I usually smash the garlic and chilies in a mortar, add my sugar, my water and vinegar and mix everything! Yum!

  • This looks so good. I used to work at this really cool pan-asian/vietnamese restaurant that had the best fish sauce ever. It looked a lot like the finished product here so I'm going to have to give it a try. Great tip about freezing the chilis too.
