Stuffed Pork Loin

Pork Loin: half
Bacon: enough to wrap pork loin
Green Onions: 1 bunch chopped
Cream Cheese: ~ 1/2 package
Jalapeno Pepper: 1 seeded and chopped
Strawberry/Fig Preserves: 3 tablespoons
Boudin: enough to stuff pork loin
Garlic: optional

Split pork loin and spread cream cheese. Then add pepper and green onions. Spoon and spread preserves (may substitute with dates and honey). Add boudin and spread. Wrap with bacon and secure with toothpicks.
Bake at 350 wrapped for 1/2 hour then unwrap and bake another 1/2 hour. Internal temperature needs to be at least 160.
