Today I'm going to show you how to make baked oatmeal.

These baked oats are great make ahead breakfast that you can reheat during the week.

This is a whole new level of breakfast oats, with better texture and more flavor!

BAKED OATMEAL RECIPE
(makes 6 slices)
Ingredients:
1 medium banana
2 tbsp maple syrup or honey
1 egg, or 1 flax egg
1 tsp vanilla extract
1.5 cups milk, dairy or non dairy (360ml)
2 cups rolled oats (180g)
1/4 cup ground oats or oat flour (25g)
1 tsp cinnamon
1 tsp baking powder
1/4 tsp salt
1 cup blueberries (150g)

NUTRITIONAL INFO (per slice):
212 calories, fat 4.2g, carb 37.5g, protein 7.4g

Preparation:

In a mixing bowl, mash the banana, then add maple syrup, egg, vanilla extract and milk, and whisk to combine.

Now add the dry ingredients, rolled oats, ground oats, cinnamon, baking powder and salt, and mix it up.

Grease your baking pan (I use 8-inch square pan) and pour the oat mixture in.

Spred the blueberries all over and put in the oven at 350F (180C) for 35-40 minutes.

Let it cool for 10 minutes, then cut into slices and serve with some Greek yogurt or peanut butter.

    Made it for breakfast with the family this morning. I added an extra teaspoon of maple syrup and served it with some unsweetened vanilla yogurt and it was fantastic!

    I've made this several times, it's easy, tasty, filling and gives me a quick breakfast option every day! Even a bowl of oats will take 10 minutes out of that precious morning schedule, and with this, I'm under 2 minutes (get it out of the fridge, plate, warm and get back to it!). As so many people have already stated, this is GOOD and you should definitely make it! I just made it again tonight. Keep forgetting to throw some chocolate chips on top, but the blueberries are great. Tonight I've used frozen cherries. Thank you for sharing and making my week just a bit easier.

    I've made it with blueberries, used this awesome high protein milk with like 8.8g of protein per 100g, and added 31g (one scoop) of PEScience vanilla gourmet casein/whey powder. It's so damn delicious, a nice break from my regular overnight oats. Thank you Sasha, your recipes are an absolute bomb.

    Just made this. I decide to make it a day ahead, refrigerate overnight and serve it tomorrow, reheated with half and half and extra fruit. What a great dish! So easy to make. And, just an FYI, rather than place the fruit on top I mixed them (blueberries and strawberries) directly into the batter. Worked out just fine! Thanks for sharing this with us!
  • This is Erick’s wife. My daughter and I made this today and it is VERY good! I added a little fresh nutmeg to it just because I like nutmeg and cinnamon but otherwise kept the recipe the same. Wonderful thank you for sharing!

    This is my go-to recipe for baked oatmeal. I replace the egg with flax seed meals (i use 2 tbsp + 6 tbsp water). I don't usually have ripe banana in hand, so I replace that with 2 tbsp of jam. I also add 1 tbsp of peanut butter and 1 tbsp of apple cider vinegar (this one is to make soymilk thicker). Thank you so much for the brilliant recipe, now I don't feel too guilty whenever I crave something sweet and dessert-like!

    Great base recipe! I followed it, but I replaced the egg with a chia "egg"; milk with almond milk; oat flour with almond flour (because I had it); blueberries with a diced apple; honey with stevia (I have problems with my triglycerides so I need to keep my dietary sugars down). I also added cinnamon and nutmeg. I just had one this morning. The chia "egg" doesn't hold the oats together as well as an egg would so I will use an egg the next time, but it was still delicious!!! I warmed it up in the microwave.

    Very delicious! Just tried making it today for the first time using pears instead of bananas and also oats combined with dried fruits and walnuts. Finally a healthy and delicious snack that's also quite easy to make. <3

    I made this but added a few scoops of vanilla protein powder! Its a complete meal! I'm a gym guy so needed a quick and healthy breakfast and in-between meal snack. This is awesome and easily portable as well. Thank you Sir!
