Fritters are a great snack and adds a little extra to your lunch box for dinner plate. These colourful and light tasty delights have a golden crispy coating and can be seasoned to suit any pallet. We bought all our ingredients in our local SuperValu. Let us know in the comments if you try these out.

    Recipe and macros: 1-1.5 kg veg total 1 large courgette grated 1 onion grated 1 kg potatoes grated 3 tbs ground flax seed 9 tbs of water 250g frozen peas At least 4 tablespoons of flour Salt 1.5 tbs oil to fry. 1. Put the grated courgette and potato into a colander. Put a generous pinch of salt onto the vegetables. 2. After a few minutes press out all the moisture and add the thawed peas 3. Mix the flax seed and water to make flax eggs, leave for a few minutes to coagulate then mix into the vegetables. 4. Add four tablespoons of flour – you may need more than this 5. 1 teasp garlic powder 6. Zest of half lemon 7. 1.5 tbs of oil on a frying pan 8. Don’t be tempted to flip the fritters before they’re properly brown. 4 servings each of 281kcal, 9.2 grams of protein; 9.1g fat; 34.8g carbohydrate. I also miss the Yo Dudes start to the vid's.

    Chickpea flour instead of plain flour would make these gluten free and higher in protein. Plus the fritters would not fall apart because chickpea flour is a great egg substitute!

    I made a ketogenic version of this, with cauliflower instead of spuds... and it turned out yummy!

    Love vegetable fritters! Thanks for reminding me this recipe!) My 5 y.o. daughter’s favorite mix is - zucchini, potato, sweet potato, chickpea flour and some dried herbs (fennel, cilantro) 😋

  • These look delicious!! We live in the middle of a small city in northern B.C. Canada so we have a small yard. We made our front yard into a huge garden so this is awesome!! I can use up a lot of veggies in this one!!

    I've found that a bit of bread crumbs works great to absorb excess moisture.
