Plastic ball, 2 handed spares absolutely. Gives you more practice. Personally, that's what I do and while I'm not a great bowler I do think it's the best to keep my forms consistent as I can.

You should definitely get/throw a plastic ball at spares when your bowling 2 handed. How would you otherwise make your spares 2 handed?
