    Im gonna go on a limb here and say making that many mashed potatoes and say it may not be "easier" but finance wise... making a 10 pound bag of potatos at once is MUCH cheaper...if anyone has a kitchenaid mixer i encourage you to make them...use lots of butter and sour cream to keep them fresh and minumize any chance of it turning brown on you...

    The Dollar Tree has aluminum pans with lids that crimp down that are sort of a coated cardboard. I use those, write directly on the lid and then they are easy to stack. Great recipes as always. I lone making freezer meals and that tomato paste trick is genius!

    I made all of these and tried them out on my family. They were easy to make and tasted delicious. The seasoning was perfect. The only issue I came across was that with the wild chicken and rice, I kept having too much liquid. However a good fix for that was adding a little instant white rice to it and it was still delicious. Also, we used the fiesta chicken casserole as filling for tacos and burritos. It was awesome. We brought two of the freezer meals with us in a cooler to our beach cottage over vacation and it was so nice to have a great meal only an hour after we checked in with no prep mess. Thank you so much for sharing these. My kids always love your recipes and they are hard to please.

  • We LOVE bob evans mashed potatoes! Julia these are going to absolutely SAVE me! I am having our second baby in the beginning of July and I plan on making a bunch of meals for us at least for the first few weeks. We have a toddler that will need to eat, a nursing mommy, and I cook for my husband everyday for work so I need to think about him too.     One thing that helps me with adding broth/stock to freezer meals is to freeze the broth in ice cube trays (because I make my own broth anytime I have meals with bones in them, I like to freeze the broth). One ice cube tray holds about a cup of liquid, so it works out really easily, and you can pop the cubes into your bags already frozen, and it's easy to pour into your crock pots or pans or whatever.
  • My cheap and easy way to make mashed potatoes (like for shepherds pie) is with frozen hash browns (southern). Dump them in a casserole dish with water, half and half and butter for about 2 hours and they come out soft enough that they mash with a spoon when stirred. So easy and taste like fresh.
