    GREEN SPRING SALAD 🥗 It’s spring (well sometimes), so let’s make a real deal spring salad.😋 RECIPE (3 servings, 20min prep time): -1 small broccoli -150g sugar snap peas Cut in pieces. -180g pearl couscous Cook on salted water for 9-10mins. Add the greens during the last 2-3mins. Then drain. -1/2 bunch mint, finely chopped -1/2 bunch cilantro, finely chopped -2 Tbsp olive oil -juice of 1 lemon -1 Tbsp of agave or maple syrup -1 Tsp each paprika, cumin, ground coriander -salt and pepper to taste Mix vigorously. Add couscous and veggies and toss. To serve on: -200g vegan unsweetened yogurt -salt to taste -1 clove garlic, minced Mix and serve the salad on a dollop of the yogurt. - GRÜNER FRÜHLINGSSALAT 🥗 Es ist Frühling (na ja, manchmal), also Zeit für einen echten Frühlingssalat.😋 REZEPT (3 Portionen, 20 Minuten Zubereitungszeit): -1 kleiner Brokkoli -150g Zuckerschoten In Stücke schneiden. -180g Perlen-Couscous In Salzwasser 9–10 Minuten kochen. In den letzten 2-3 Minuten das Gemüse hinzufügen. Anschließend abgießen. -1/2 Bund Minze, fein gehackt -1/2 Bund Koriander, fein gehackt -2 EL Olivenöl -Saft von 1 Zitrone 1 EL Agaven oder Ahornsirup -1 TL je Paprika, Kreuzkümmel, gemahlener Koriander -Salz und Pfeffer nach Geschmack Kräftig mischen. Couscous und Gemüse dazugeben und vermengen. Zum Servieren auf: -200g veganer ungesüßter Joghurt -Salz nach Geschmack -1 Knoblauchzehe, gehackt Den Salat vermischen und auf einem Klecks Joghurt servieren. #quickveganrecipes #easyrecipes #easyveganrecipes #veganrecipes #veganfood

    Looks really good! For those with no access to pearl couscous: quinoa, bulgur, buckwheat, or even rice can be good alternatives :)

    This looks bomb, love me some pearl couscous with veggies, this needs to be in my rotation
  • try to steam the vegetables in a pot with about half a cup of water and a little bit of salt. it will save the the flavors and vitamins. when you boil broccoli a big amount of the vitamin C in it comes out to the water to when you throw the water you loose the vitamins. that's why it's better to steam it. it gets cooked perfectly and all the flavors and nutrients stay :)
