The Cottage Cheese Pancakes I'll Eat Any Time of Day

Ingredients:
- 250g cottage cheese (1 cup)
- 1 egg
- 70 g all-purpose flour (1/2 cup)
- 1 tsp baking powder
- 1/4 tsp salt
- 60 ml milk or alt milk (1/4 cup)

Let's make the most delicious Cottage Cheese Protein Pancakes I’ve been making on repeat. These pancakes are a fantastic and versatile way to incorporate more protein into your breakfast routine, but they’re also great for lunch, dinner, or an afternoon snack. Unlike protein powder pancakes, these pancakes have a silky, custardy texture and a neutral flavor that pairs well with a variety of toppings.

These pancakes are super easy to make. You just need to blend cottage cheese, egg, milk, flour, baking powder, and salt to create the pancake batter. Then, griddle them up until they’re golden brown and eat right away or store them for later.

    I will definitely try these. I really like the fact that they can be used in both savory and sweet recipes. I also really appreciate the idea that you'll be doing versatile recipes like this in the future. I think we're all at the point where we want to use up what is in the fridge, don't want to waste, but still want delicious meals.

    INGREDIENTS 250 g (1 c.) cottage cheese 1 egg 70 g (1/2 c.) all-purpose flour 1 tsp baking powder 1/4 tsp salt 60 ml (1/4 c.)milk or alt milk 1/2 tsp Oil or butter for greasing the griddleoptional if using a non-stick griddle INSTRUCTIONS Combine cottage cheese, egg, and milk in a large measuring jug or blender. Blend until smooth, using a stick blender or regular blender. Add the dry ingredients and stir until just combined, being careful not to over mix. Allow the pancake batter to rest for 5-10 minutes. Meanwhile, preheat a nonstick griddle to 325F. Lightly grease the griddle (optional), and scoop the pancake batter onto the griddle. If using a 1/2 cup measuring cup as a scoop, you should end up with 4 large pancakes. Allow the pancakes to cook on the first side until bubbles form on the surface—approximately 5 minutes. Flip the pancakes, and cook for another 3-5 minutes or until cooked through and golden brown on both sides. Notes: can use, bananas, pumpkin, shredded zucchini, ground oatmeal or almond flour, etc.

    💖Yum I love cottage cheese pancakes. One of my food mottos is 'anything can be made into pancakes' cuz I put all kinds of leftovers, especially when I'm tired of them, into pancakes. Often make them kinda Asian inspired. I don't even bother with a blender, I just whisk real well.

    I made waffles today using a very similar recipe from a Mennonite cookbook I bought in the 1980s. They were called High Protein Waffles. They turn out soft and fluffy, and few survive the first sitting but if some do they freeze well. Thanks!

    Love the non sweet cottage cheese idea, been hugely into it myself lately, I used to love it with just some halved grapes for a breakfast snack. I used to make Nigella Lawson's ricotta pancakes with lemon zest, they were so airy and custardy, but cottage cheese is cheaper haha so I will try that next!!
