MENUDO Rojo | Perfect Step By Step ❤

This MENUDO Rojo is one of my favorite mexican dishes, I was brought up having this amazing dish atleast 3 times a month. I season it well just like I have been doing for years, the unique flavor of this wonderful dish is like no other. I use Beef tripe (pancita) and beef feet which is a winner! I use as many fresh ingredients as possible like guajillo chiles, Ancho chiles and New Mexico dry chiles and I season it with oregano, cumin, coriander and lots of garlic and onions along with cloves, and allspice making it the 5 star dish that it is.

INGREDIENTS-----------------------------
3 & 3/4 LB. BEEF TRIPE (Pancita)
4 beef feet
2 garlic heads (cloves peeled and blended)
4 large garlic cloves (for blender)
2 tsp whole cumin (ground in molcajete)
1 tsp peppercorns (ground in molcajete divided
Salt (as needed)
3 Bay leaves
5 whole Allspice (ground in molcajete)
3 cloves (ground in molcajete)
2 tsp ground coriander
1 & 1/2 Tbsp Mexican oregano
3 tsp onion powder
3 tsp garlic powder
9 dried guajillo chiles
3 dried Ancho chiles
2 New Mexico dried chiles (you can substitute guajillo)
1 & 1/4 large onion (divided)
2- 30oz. cans white hominy drained
14 C. water
1 C. chile water (for blender)
YOU CAN USE POWDER FORM INGREDIENTS IN PLACE OF GRINDING IN MOLCAJETE

BLENDER INGREDIENTS------------------
SOFT CHILES
1 tsp cumin
1/2 tsp peppercorns
5 whole Allspice
3 cloves
1 & 1/4 Tbsp Mexican oregano
2 tsp Coriander (ground)
3 tsp garlic powder (provides stronger presence than fresh)
3 tsp onion powder (provides stronger presence than fresh)
Salt (as needed)
1 C. chile water
■ YOU CAN ADD CHICKEN BOUILLON IF YOU LIKE FOR DELICIOUS ADDED FLAVOR, MY RON LOVES IT. ADD AS NEEDED IF YOU DECIDE TO TRY IT.

I prefer honeycomb better 😍 and much tender to me, I do appreciate the ideal of using vinegar to calm the smell 🤗 ❤🙏🌺 p.s. my Mamasita taught me to cook the way her mother taught her from scratch to flour and corn tortillas etc I love cooking for my family and friends! I only wish my children would follow in my steps but have been writing a family cook book for them to have and cherish! Looking at you make yours is so close to mine!
