Along with xiaolongbao, yellow croaker noodles is one of the most famous and iconic shanghai dishes. I tried it for the first time with my good friend ‪@maikelaoshi‬ and had the best time learning about this dish with the boss of the restaurant. Such a legend!!!

I hope we can find some more hidden gems like this in Shanghai!
  • @samchen0079
The owner is a typical Shanghai uncle, very straightforward, honest and hard-working, appreciate that!

The passionate owners are usually grumpy because most customers actually don't understand the effort put into making a dish. Making a dish from scratch is definitely difficult. Kudos to the gentleman for insisting on doing his dish this way.

That man is not just a business owner, he is more like a chef. Passionate about his food and makes it as best as he can. Another great video!

This boss talks loudly but when it comes to his noodle's quality, you can see he is 200% totally immersed in it❗All fresh, all handmade and no takeways to keep that freshness❗How many boss would do that for their business and customers⁉
  • Put this place on my list to eat at. Love the boss’s passion. The spring rolls remind me of fish tacos 🌮

    这老板太有意思了,比起面,更想认识认识他这个人。做事认真,有自己标准和原则,并且一以贯之的人,谁会不喜欢呢
  • I love the boss of this shop! He is knowledgeable, exhibits great integrity and pride in his product, and cares intensely about his customers' experience. What a force of nature! I would happily eat at his place a few times a month.

    初時覺得價錢很貴,之後聽到老闆的講解和以那碗麵的份量,就覺得真的很便宜,在香港,吃一碗不足料的黃魚麪,閒閒地也要70 元,而且,味道只是一般般呢。
  • Mike's conclusion on frog meat is pure gold, couldnt agree more

Wow, I am so impressed, and touched by the passion of this owner. He's so proud of his masterpiece and philosophy of how his business should operate. I wish I will have an opportunity to visit his restaurant at some day, not just to enjoy the food but to have a firm handshake with this person.
  • @landdevil
The owners is so passionate about his work. Glad to see that in today's world.
  • @alexfrank5331
He's not a businessman. He's an artisan chef who cares more about making the best dish more than making the most profit.

"半成品" means processed products. In this context, it means they always use fresh fish meat as ingredients (not frozen, not preserved, probably they buy live fish from the wet market at early morning and make dishes from them) .

4:50 aw that's really sweet, looking out for his staff

I love this guy, such passion. I'm totally with him about the 'do not bring outside food in here'. I worked in hospo for years and I agree that it's a basic principle of life. I'm always amazed that a lot of people don't get it!

Oh my god, this is "THE" famous Shanghai home dish for locals, so jealous. It brings back childhood memory :) Very happy for you to share your experience with the world
  • @Aytt23
No drama 100% RESPECT for people still doing business like this
  • @wynnvip
This restaurant owner is hella serious about the quality and freshness of his dishes
