Guess who I got a call from? Yep, Doc Esselstyn himself! Did I expect for him to personally get back to me? No! But I’m so very happy he did! I’m now pointed in the right direction and have high hopes of one day meeting all of you guys! Whenever I want to add great umami flavor to any savory dish - I always add sautéed onions- And I never ever add oil to the pan- it’s totally unnecessary! But you need to watch them - add very small amounts of water if the onions stick to the pan. Stir often. With some patience- the onions become translucent and eventually brown. They develop the most delicious oniony flavor that lends richness to any vegan dish!

it's a lot easier to mash the beans in a bowl or on a plate before adding them to the rest of the ingredients. Looks yummy!

Probably easier to pulse the beans in the processor and then add the potato and quinoa. I will have to try this one

I have maintained for a long time that the taste of traditional beef burgers comes down to the condiments; the meat is negligible! But plant based burgers have a lot of flavor on their own and then the condiments actually complement them. So much fun; love Ann and Jane! Watching you always makes my day! Really love the cookbook; bean burgers on today's menu for sure.
