The Ultimate Juicy Mushroom Burger | Struggle Meals

Get your daily dose of 'shrooms in with this juicy veggie burger! Frankie Celenza (@frankiecooks) explains how mushrooms are an excellent meat substitute both in flavor and in cost.

MUSHROOM BURGER
Yield: 4 burgers
Prep Time: 20 minutes
Cook Time: 20 minutes

Ingredients:
3 butter pats
1 tablespoon vegetable oil
1 1/2 pounds baby bella mushrooms, finely chopped
2 cloves garlic, minced
1 1/2 cups cooked and cooled rice
1/2 cup Parmesan cheese
1/2 cup breadcrumbs
1 egg, beaten
1/4 cup chopped parsley leaves
1 1/2 teaspoons kosher salt
1/2 teaspoon black pepper
4 slices Swiss cheese
Salt and pepper
4 brioche buns, toasted
1 large tomato, sliced
4 lettuce leaves
Mustard

Steps:
1. Heat a large skillet over medium heat. Add the butter pats and oil. When the butter has melted, stir in the mushrooms and garlic and season with salt and pepper. Cook for 12 to 15 minutes, until all of the liquid evaporates. Set aside to cool.
2. In a medium sized bowl, mix together the parsley, egg, breadcrumbs, rice and cheese. Stir in mushrooms and mix until well combined. Form into 4 patties and place in the refrigerator for 30 minutes.
3. Cook in a skillet for 8 minutes per side, or until golden and crisp, pressing down gently with a spatula as they cook.
4. To assemble: Place a burger on each toasted bun with a slice of tomato, lettuce and mustard.

  • Made this for my vegetarian family: it was delicious! For them as well as me the meat eater. I recommend truffle mayonaise on top, it will blow you away.

    Just made these. I loved the mushroom mix. I had a hard time not picking at it as it rapid cooled. I added 1 tea onion powder + 1/2 garlic powder (I was out of fresh garlic). So good! I can easily see me making this mushroom mix and adding to my homemade turkey burgers to make the batch go further in the summers. Win-win. :-) TY, Frankie!
  • Thanks Frankie! You're always coming up with the best meals. As a student and trying to be cheap healthy it's great. I've tried plant based burgers before and they weren't very good plus the calories. Looking forward to trying this!

    If you have enough cash for a splurge meal, there's a recipe on...Avant Garde Vegan, I think it's called? It's a mushroom burrito where you slice up a few kinds of mushrooms, grill the hell out of them, and I'll confess to you that I am not vegan so I used regular tortillas and sour cream. It. Was. AMAZING. That might easily be one of the most delicious things I've ever eaten. So I am all over this burger recipe!

    Hi Frankie!!! Love your recipe. I am not against using eggs as a binder but I always have chia seeds and flax seeds in my cubboard. So I used them instead and, FYI, it came out great! Thanks again!
