------
RECIPE
------
TOMATO SOUP
▪2 28oz cans whole peeled tomato
▪1 medium red onion, chopped
▪30-40g or 8 cloves sliced garlic
▪50-60g or 4Tbsp (a very long squeeze) olive oil
▪15g or 2 1/2tsp salt
▪15g or 3 2/3tsp sugar
▪750g/mL or 3c chicken stock (+ additional 75g or so to thin soup if needed)
▪40g or 3Tbsp tomato paste
▪1 chipotle chili in adobo (optional)
▪Grated parm
▪Chives, minced
▪Additional olive oil (for garnish)
▪Pepper

Preheat oven to 450F/232C
Add canned tomatoes, onion, garlic, olive oil, salt, sugar, chicken stock, tomato paste, and chili in adobo to large baking dish or dutch oven. Stir ingredients to combine and roast in the oven for 1 hour, stirring halfway through.

After 60-75 minutes of roasting, remove from the oven, carefully ladle half of the “soup” into a blender, and blend on high until smooth (obviously this stuff will be hot so use caution) . Transfer to a fine mesh strainer over a sauce pot and force soup through to create a silky texture. Repeat with the second half of the unblended soup. If needed, add additional chicken stock to thin to desired consistency. Season to taste with salt. Hold soup over low heat to keep warm while you make the grilled cheese sandos.

Garnish with chives, olive oil, parm, and black pepper.

GRILLED CHEESE
▪125g or 1 stick butter
▪75g or 1/4c + 1 heaping Tbsp mayo
▪15g or 1Tbsp dijon
▪Basic hearty white bread (recipe here: BLT video: @ocBM)
▪Cheeses: american, gruyere, provolone

Add butter, mayo, and dijon to food processor. Process until smooth. Set aside.

Preheat nonstick pan over medium low heat.

Liberally spread butter/mayo/mustard mixture over one side of two slices of bread. Flip to non buttered side and layer down cheeses - slice american, slices gruyere, slice provolone, and another slice of american. Place in skillet, pressing down with spatula for about 30 seconds. Cook for additional 90 seconds or until side one reaches desired amount of brown. Flip to the second side and toast for an additional two minutes or until side two is golden brown and cheeses are melty.

  • I finally made this soup and I am NEVER EVER EVER going back to cooking it on a stove top. Roasting the tomatoes is the only way to go, flavorwise, and the smell in my kitchen was heavenly. Thanks for such an easy, delicious recipe.
  • @JBALLMORE
this channel is my go-to source for recipes. Probably cook something from here once or twice a week... and I NEVER REGRET IT! So tasty and simple.

Just made the soup portion of this and it is PHENOMENAL. Even my husband, ever the soup grouch, wanted a bowl! I took the "guts" from the strained soup in order to use them as a pizza sauce or something in the future. Never had a bad recipe from any of your videos!

A great alternative to Craft Singles is Land'O Lakes' Sharp Cheddar American. It's flavorful and melts beautifully, as it's slightly processed.

I've done the same technique for years, just don't add the broth to the veggies...roast them until they submit with lots of carmalization...Don't Stock Block, BRO!...add stock afterwards on the stove. Love your stuff, Bry!
  • The tomato soup recipe is BOMB! I loved it, it wasn’t too hard to make and it had a really well rounded flavor profile. I think next time I may add a little cream just because I do enjoy a creamy tomato soup, but this is going to be my go to for tomato soup (a soup I have been trying to conquer for ages now). Full disclosure, I just made a normal grilled cheese with cheddar and it worked well though yours is probably tasty as well.
  • I've been 'baking soup' for years to make roasted vegetable soups. I started doing it when making a roasted sweet potato and lemongrass soup and didn't have spare stove space. Baking tomato soup is a brilliant idea. Will be trying this out.
  • @sherpa8750
Im so glad you didnt feel the need to add any cream at the end. Looks so velvety and creamy already. Defintley going to try in the colder months! Thanks Bri !
  • Wow… love the new weeknighting series! We’ve made the chicken tortilla soup recipe 5 times already and can’t wait to make this one. Misen, btw, is my favorite pan brand. Way to go B!
  • @zacmackey
Bri!! I made this entire meal yesterday (bread included with the 24 hour poulish) and it was AMAZING. That was my first time ever making a loaf of bread and it's going to be a new weekly thing from this point on. And that grilled cheese, wow, who could have guessed you could add so many interesting flavors to something so simple. The fresh bread, the mayo/butter/dijon spread for toasting, the combination of cheeses, it was just all so very good. I had one for breakfast even, haha; I was just craving it! And the soup too, the smokiness and spice from the chipotle added so much to it. I just loved it all, and so did my wife and my 4 year old daughter. Great stuff man, keep it up!

I'm glad "Weeknighting" has become a thing. Tried your Shawarma tacos the other day and was blown away with how good they were! Loving the content 👍
  • I made both of these recipes for my husband and his friend, both grilled cheese and tomato soup aficionados. WOW! Winners both! I try to avoid bread so I didn't partake in the grilled cheese but the soup was magnificent.
  • @wolfura
This has probably been one of my favourite things I made from your channel. It's so simple, easy and so good. Great comfort food on a rainy evening. It helps I'm a sucker for a good tomato soup.
  • @FRO8181
I love this! My son literally lived on tomato soup and grilled cheese sandwiches for a while, so finding a new (easy) recipe is awesome!
  • @sallystories
If you haven’t already: MAKE THIS TOMATO SOUP. I made this recipe for my family and they were like wow this is the best tomato soup ever even better than a restaurant! It was really easy and so delicious!!
  • made it tonight (bread too), simply outstanding. loving the "weeknighting" feature. thanks for another amazing meal.
  • @vjhreeves
That is the most work for a tomato soup & grilled cheese I have ever seen.
  • Made this last night and it is one of my favorite recipes ever. Super easy to make, absolutely delicious, and inexpensive. This is a must try.
  • @scottkelley1558
Made this tonight and LOVED it! I started the stew in a dutch oven and went outside to work. When i cam back in the house smelled of tomato and garlic goodness! My outh started watering immediately. I used a hand blender and got a nice puree. I did not sieve it and was pleased with the texture. Extremely pleased with the results.
