From near Disneyland, California. We cook fettuccine - drain it but leave a little liquid with the pasta - put butter in a non stick fry pan - add fettuccine - blend in eggs and stir - add chopped green onions - shredded Parmesan - salt and pepper - and serve immediately. Simple and delicious! 💞

Eggs had lots of shell pieces in them. NEVER crack eggs on the same bowl you're putting them in!. Just another hint for cooking spaghetti: don't put oil in the water like my mom did. Nothing will stick to the noodles.

All these dishes I have made before they are called frittata if I spelled it right. My grandmother use to make this Italians never waste food Even if you have leftover spaghetti use to make it with eggs,cheese,Parmesan cheese and parsley. You can make frittata with any leftovers. My twin boys still love this when I make it. And it doesn’t take long to cook at all.

My mother used to make this for us but she called it depression food because that is what her mom made for them during the depression. They had chickens for the eggs, onions, cheese and peppers from the garden. It is delish and now I make this for my grand children and great children and they all love this.
