POV Oyakodon

Oyakodon is simple Japanese home cooking. It translates to "parent and child rice bowl," and refers to the use of chicken and egg. You simmer chicken and onion (or leek or scallion, or whatever) in a mixture of dashi, soy sauce, sake, and sugar, then stir in a beaten egg and cook it until just barely set, and slide it all out over a bowl of rice. If you have mitsuba (japanese three-leaf herb), that's a very common addition as well. It takes about 10 minutes to make and makes a nice, simple meal.

I add an extra egg yolk to mine, but you don't have to.

PLEASE READ!

The coronavirus has hit many folks hard, including first responders and hospital workers, individuals and families who were already food insecure, and service industry employees who are, for the large part, currently out of a job.

My goal is to help fix both these problems in the best way I know how to contribute: organizing people, and cooking food.

If you would like to donate to our free meal fund, head to www.toasttab.com/wursthall/ where you can buy a boxed meal for someone in need. These boxes go directly to the frontline workers and food insecure families who have been hit hardest by the coronavirus pandemic. They also allow me to hire back my kitchen team to cook and pack these meals (in a safe, clean way). So far we have served nearly 500 meals, and the number goes up every week.

If you would like to make a monthly recurring donation of any size, head to my Patreon account at www.patreon.com/kenjilopezalt. 100% of the proceeds go directly to the free meal fund. You can also help by buying my books at bookshop.org/shop/kenjilopezalt where 100% of my sales commission goes to the free meal fund, and an additional 10% goes to independent book stores around the country.

Finally, stay safe. Here is my guide to food safety and the coronavirus, written with the consultation of virologists, food safety experts, and infectious disease specialists, and kept up to date as new research emerges: www.seriouseats.com/2020/03/food-safety-and-corona…

I appreciate it SO much when TV chefs make a recipe and go "oh, but you can just use a skillet. oh, but you can use regular onion too." Kenji's approach to food gives me a huge boost of confidence in the kitchen. I remember him saying in another video: "Some people would say it's not 'authentic'. I say I -don't care-. It tastes good." And that's a mood. <3

If you substitute the chicken with any other meat, it becomes a rice bowl called Tanin-don (他人丼, strangers rice bowl), or Mamako-don (継子丼, stepparent-and-child rice bowl).

Dear Kenji, I prepared smashburger for my mom last week and she loved it. It was my first tasty dish ever! Ever since then, I'm finally cooking! Your videos finally motivated me to do it. Thank you a million times.
  • If and when the lockdown is over, can we not tell Kenji so he keeps this up?

Having watched a lot of these videos, I realize Kenji's dog eats better than I do

This is exactly what I was planning to make for the family tonight -- but we eat it with red pickled ginger instead of togarashi. I like your addition of the yolk.

It is extraordinary how helpful these POV videos are. Nothing else I've ever seen, with regard to cooking, has made understanding these recipes so simple. I am as far from a competent cook as anyone can be and I have still managed to make some fantastic things from these videos.
