I really love the Poblano peppers in nearly everything. This recipe is similar to a zucchini Chicken casserole that I made with a green enchilada sauce, but I think it would taste even better with Poblano sauce! If we have a bag of tortilla chips that is a few days old I will simply combine with the green sauce along with chicken pieces, onions chopped and bake topped with cheese for a terrific casserole... THANK YOU for sharing your awesome recipe!! * Nobody needs to know how quick you made it** by using chips just stirring them into the sauce and baking with cheese on top.. SUPER fast!
