Floating gravity blocks are still able to be placed in 1.16+ with a different glitch. By placing the gravity block on the arm of an extended sticky piston attached to slime blocks that are unable to retract due to immovable blocks, when the piston arm is retracted the gravity block stays in place. This trick also works to get floating water blocks, as well as any other block that would normally need to be placed on another block.
