cherry tomatoes are the best, as they're more consistent in flavor. roma etc.. if they arent in season, can be bland taste wise.

I've been making almost bosco sticks instead of grilled cheese sandwiches. Flatten the bread, add cheese, roll up, and grill that. It holds onto the cheese much better and the bread gets crispier. Also a better bread to cheese ratio.
