  • Been cooking this for nearly sixty years, a filling and tasty meal for growing boys. I always add a little cream to the egg mixture and you can add any leftovers, chicken, bacon, ham or fish to make it into a more substantial meal 😋
  • I learned to make this when I was visiting a friend in Spain. The trick is to cook over a low heat. It's good to eat either hot or cold. It's a great summer dish cold seved with a nice salad.
  • My Mother and Grandmother taught me this dish. I’m American, Italian decent. We love making it, my family loves it too. The only difference is we make it with cooked onions, we just call it Potatoes, eggs and onions. We start by cooking potatoes, by frying in olive oil, doesn’t matter how you cut them, just fry golden brown. Remove to a bowl. Next sauté sliced or chopped onion, I love onion, so usually make equal amount as potatoes, then as they are golden brown salt and pepper them. Add potatoes cook together a few minutes whisk together equal amount of eggs, pour over potatoes and onions. If you want a constructive finish, cover a few minutes, then pull edges with a fork, while tilting pan pouring egg mixture around pans edge. Once most of mixture is off the top, pop under a broiler to brown the top. Slide onto large pizza pan if your frying pan can’t be put under broiler, and brown that way too. Cut into wedges. If un constructed just pour beaten eggs over potatoes and onions, and mix until eggs are cooked the way you like them. Serve with toast or garlic bread and salad of your choice.   • Inventing the wheel? This is the traditional Spanish omelette, tortilla de patatas. It is said to have been Napoleon's favourite dish. You can add anything left in the fridge, the basic is just potatoes, eggs and a bit of salt. Best trick if you are lucky to live in a Mediterranean country: boil the cut potatoes in olive oil, rather than frying. The potatoes will be soft and the omelette moist and gorgeous. Que aproveche!

  • A spin off from a Spanish Tortilla. This appears more beautiful. I can see using yellow onion along with the salty cheese such as Feta & Dill would complement each other. The salad was a great accompaniment. Nicely done!

  • A nice recipe that I use at breakfast time . Try adding some cut spinach and grated carrots to the bake to enhance its visual appeal . If having this for dinner , a tomato and lettuce salad with red and yellow peppers would go well with it . Toasted garlic bread and a sweet relish would compliment the meal beautifully .
