Seafood Gumbo Part 1

Lump Crab Meat: 2 pounds
Crabs: 1 dozen gumbo crabs
Shrimp: 5 pounds
Celery: 4 stalks chopped
Onions: 4 chopped
Bell Pepper: 4 chopped
Green onions: 4 bunches chopped
Minced Garlic: 5 tablespoons
Tomatoes: 2 cans stewed and 2 cans diced
Salt: 2 tablespoons then adjust to taste
Cajun Seasoning: Heaping tablespoon
Bay leaves: 4
Okra: 2 12oz packages

1) Make roux and place to the side: use equal parts oil and flour. For a 1-1 1/2 gallons of roux, use 2 cups flour and 2 cups oil then add water
2) Use enough oil to cover the bottom of large pot and sweat vegetables; onions, bell pepper, green onions and celery
3) Add garlic, cajun seasoning and bay leaves
4) Add tomatoes
5) Add roux and 1 1/2 gallons of water
6) Add lump crab meat and gumbo crabs
7) Add okra
8) Add shrimp
