Tip for you on the cheese, put the cheese in the freezer for a while and it makes the shredding process easier.

I do these in an air fryer, but you can only do 2 at a time in my air fryer Cook the dogs for 7 min, then do the built dog for 2 min

Looks really good. Curious, why score the dogs? I like a crisp char in my dogs and it seems by scoring they would lose some juice.

I hate hot dogs, but these would probably be great with bun-sized smoked sausages. I think I'd substitute diced onions for the jalapenos, though. IMHO, not everything benefits from the addition of heat.
