Super Moist And Velvety Lemon Loaf Cake

How to make Lemon Loaf Cake that is super moist and velvety with simple ingredients you can find at home.

Here's what you'll need:
1 cup sugar (200g)
2 teaspoon lemon zest (8g)
1/2 cup softened butter (110g)
2 tablespoons of veg oil
2 large eggs (room temperature)
2 tablespoons of lemon juice (30ml)
1 and 1/2 cup all purpose flour (187g)
1 teaspoon baking powder(5g)
1/2 teaspoon salt(3g)
1/2 cup milk (120ml)

LEMON GLAZE:
1/3 cup icing sugar (50g)
2 tbsp lemon juice (30ml)

1▪️Preheat oven at (160ºC/320ºF-Convection oven) OR (170ºC/340ºF for conventional oven). In a bowl, mix and rub together sugar and lemon zest to infuse the aromatic lemon oil. Add softened butter and oil, beat until light and fluffy or pale yellow.
2▪️Add eggs one at a time, mixing after every addition. When its fluffy add lemon juice and mix.
3▪️Sift in flour, baking powder and salt. Mix until no traces of flour. Add milk and use whisk to mix just until smooth. Do not over mix. Scrape sides and bottom.
4▪️Line an 8x3x3 inches loaf pan with parchment paper. Place the batter, spread evenly and tap to release excess bubbles.
5▪️Bake in a preheated oven for 40 to 50 minutes or until toothpick comes out clean when inserted. See oven temperature specs on top.
6▪️Remove parchment paper and let it cool down completely on a rack.
7▪️Prepare lemon glaze: Mix together icing sugar and lemon juice. And glaze that beauty! ☺️
8▪️Serve and enjoy!

    For those who have the habit of reading comments before trying out a recipe to know if this really works, YES, go for it. This recipe was awesome. I doubled the batter and made a Bundt cake out of this recipe. It was very moist and had a lovely crumb.

    I live in Morocco and lemons are in season now. My neighbor gave me over 50 lemons from his trees. In searching for recipes that use lemons, I came across your recipe and had to bake it. It was delicious! I will now bake some for my kind neighbors. I'm sure they will love it too. (I predict more lemons will be coming my way after they taste this cake 😉).     This was indeed super soft and moist lemon cake. I reduced the sugar to 150 g, and it was perfectly sweet for my taste. I baked mine for 50 mins at 170°C and 10 more mins at 180°C. This was by far my favorite lemon cake I have ever tasted. Fresh, lemony and so delicious. Thank you for the recipe and a lovely presentation.:)

My mom & I are coming off of a very horrid streak of misery (losing g my brother, sister, aunt, paternal aunts, my cousin that was like a son to her, her husband and then she ended up with covid and bilateral pulmonary embolism...THEN I was rear ended and have just been a mess. Needless to say a friend of ours is raising money to afford surgery and I'd tried COUNTLESS lemon bread recipes for a fundraiser bakesale we are doing in her honor. THIS recipe saved us as 85% of the orders we received were for this loaf. 😭😭😭 I cannot thank you for sharing this. Mine didn't come out as tall or woth the split top. But it's delicious and fluffy!! I used what I had on hand, which was a 9" not 8" ...sorry for the novel! That's how excited I was for it to finally work!!! 🎉🎉🎉
  • I cut the sugar down to 3/4 cups like a comment suggested and used a 8x8 inch cake pan and baked the same temperature as the video for 40 minutes and it turned out so delicious!! Moist and velvety is what this cake is :) the amount of lemon is perfect from inside the cake to the outside. Try it!!! 🍋🍰

    Lovely recipe and tutorial. For 54 of my 67 years I've been baking - sisters, mother, Aunts, Grandmothers and find this a lovely recipe. May I include that if no loaf pan is had a cake pan or smaller round 9 " pyrex can be used. Double the recipe and a tube pan can be used. We never had parchment paper, so butter and flouring the baking dish, non stick spray or a paper towel on the bottom of the pan, all do the job. Never worry if you don't have the "right" baking pans because in all actuality square, round, loaf, pyrex, non stick, baking glass or tin will do! You can even use an empty soup can or two if it was absolutely necessary 😅 Just make sure that whatever you check the middle with comes out of the center of the cake with nothing on it. Thank you 🥰

    Just tried this! Super good overall and very light and soft.  -use room temperature milk -I would not rely on the measurements by grams, found them to be inaccurate when it came to lemon zest and the glaze. -took me exactly 50 mins and came out perfect

    Just made this tonight and it was delicious! I love lemons and I am constantly looking for new recipes for me to try and this hit a spot for me. It was tart, but not overly so. Sweet, but not so sweet that I felt like I ate a spoon full of sugar. Thank you so much, I'll be adding this to my regular list of go tos.

    I have just made this and it is indeed super moist. I used Greek yogurt instead of milk as I was running short and cut the sugar to 100g. I added extra lemon, drizzling it over the top when it came out of the oven but it still wasn’t enough for me. I might add some lemon flavour next time…….and there will definitely be a next time. It is so moist it would make a lovely dessert served warm with Limocello ice cream…..I need to invite some friends round!
